"..well, my friends, finally I feel at home. Welcome. Those who already know me are aware, but are still amazed, of all my adventures, when I ran, tested, risked, from the "Attempt" to the "Bacaro", from the "Mirror" to the "Pitorsino". For those who experienced it, I think I can say that I staged a wonderful personal gastronomic theatre, but here it's different. This is home. I have realised that maybe my life has been a long, beautiful approaching march to this valley.
And I have realised that what I really wanted was to stop beside these trees, inside these stone houses to experiment a different hospitality.
Creating "the dish", seeing friends happily tasting my things isn't enough for me anymore, I feel that the time has come to offer and attempt the complete happiness of my guests."
