The Farm-stay  
 

The farm-stay, overlooking the Orcia Valley , is situated between the Amiata mountain and the small town of Montalcino (about 15 km away), in the middle of a centuries-old olive park of unbelievable beauty. Its origin go back to the year 1260; during the beginning of the 17 th century it became an important olive-press factory. But it's only since the 90ies of the last century, that is has been completely restructured, with fully respect of the old structures, re-introducing also the tradition of oil-pressing procedure for the production of an extraordinary cold pressed extra virgin oil extracted from the typical olive fruit of Seggiano. Due to its unrepeatable and unique taste, and the antioxidant substances contained in it, it is even considered to be curative.

The appartments , which go from 45 to 85 square meters of size, are distributed in the different farmhouses of the estate, amongst olivertrees and lawns. They are all elegantly furnished in the typical rustical tuscany style and equipped with all comforts: chimney, indipendent heating, telephone, satellite TV and dishwasher. Also a secretary service for working purpuses is at your disposal.

The incredible natural scenery is ideal for walks and trekking excursions along delightful paths within and outside the estate, upwards towards Mount Amiata and Mount Labro , downwards towards the gentle slopes of the Orcia valley.

The property is completed by two wonderful, panoramic swimming-pools , the possibility to enjoy relaxing oriental massages, a well equipped boccia field, mountain bikes and last but surely not least beautiful "Maremmani" horses and a rare "Amiatino" dunkey which can be used for trekking and unforgettable country walks on meadows, in the woods and beside the streams.

But the beating heart of the farm is the "Agriristorante" , where Mr. Enrico Casini , an estimated and well known eno-gastronomic Chef de cuisine - during the year 1985 he was awarded as one of the seven best cooks of Italy under 35 - is waiting for you. He was a pupil of the famous master in this field, Mr. Luigi Veronelli . After having collected important experiences all over the world, he is now happy to cuddle your palate and your soul with the simple and amazing gastronomical culture of these sites, refurbished with the experience, the culture and the fantasy of the actual tastes and requirements.

Every evening a different six-course menu will be served, with the according wines if you wish. His nearly maniacal research of the best products is expressed in simple but sublime receipts, and in his "Osteria" , a shop where he exposes his personal selection of cheeses, cold cuts and wines, apart from some very few delicous specialities that he prepared and packed by his own, you can select and buy - also via internet - these specialities to take back home as a souvenir of your stay.

Thanks to the bright cooperation of his young wife Stefania, own baked breads are always available, so as the "pasta" (noodles), worked out by hand with the rolling-pin like "once-upon-a-time", and a big choice of home-made sweets and sorbets.

Cooking courses of 2 days (weekend) or 6 days (weekly) are also available. You can participate to the selection of the menue, the shopping and preparation of the food, and of course to the daily dinners, together with the Chef de cuisine..

The farm produce the fine olive oil of Seggiano , extracted from the own harvest, following the latest advices of Luigi Veronelli, that means with olive fruits without stones, which are pressed every 4 to 6 hours, in order to guarantee the highest quality, from the plant to the bottling. The pressing of oil happens in the new oil-press factory, where we can organize on request guided visits, offering tastings of the different "cru" (types of cold-pressed oil).

Apart, we offer also guided visits to the cheese factories of Seggiano, where you can taste the extraordinary "pecorino", a cheese produced with the local sheep milk. So as to offer a comprehensive range of wine and food tasting possibilities together with some cultural curiosities from the past, your host Enrico Casini has opened the "Seggiano Caffé" ( 3 km from Le Casacce), where you can enjoy in a pleasant country atmosphere delicious breakfasts or lunches with home-made cakes, tasty Neapolitan pizzas and roman-style toasted bread; mouth-watering traditional or specially created recipes, delicious snacks with cheese and salami selections combined with daily home-made breads and the wines from the cellar, all the time accompanied by the sentimental background music of famous hits from the sixties played by a genuine dear old juke-box. In the customary billiard-room you will also find an intriguing selection of comic strips and famous books;

We also propose delicous products "de.c.o." (that means that they come exclusively from the territory of the comunity of Seggiano), typical soups and "polenta", in a environment of antique and fascinating countryside atmosphere. Enrico and Stefania Casini are also, together with their families, producer of one of an important and particular wine of the Maremma area, the "Poggio Ciliegio" , that you can drink together with their sangiovese wine "Il dono" at the restaurant. Obviously they can also be tasted during the guided wine-tasting tours in the most important wine cellars of the surroundings, where the important wines of Montalcino , of the Tuscany region, and the new wines of the area of Monecucco are offered.
