The true heart of the estate is the agri-restaurant with the renowned
and highly reputed chef Enrico Casini, who was acknowledged as one
of Italy's top seven cooks under the age of 35, and a student and
collaborator of the great master Luigi Veronelli. Enrico will delight
your palate and soothe your soul as you rediscover the splendidly
simple local culinary and wine traditions, revisited with all his
modern-day experience, knowledge and creativity.
Every evening there is a different taster menu with a variety
of courses, and each dish can, if you choose, come accompanied
by a suitable wine. The quest for the best products - and we grow
as much as we can in our own vegetable garden - ultimately takes
form in simple yet sublime recipes.
Thanks to a special agreement with the farm "Il Felcetone",
you can reserve an evening meal with a special menu built around
the fantastic meat of the "macchiaiola maremmana" black
pig, a breed recently rescued from the very brink of extinction.
You can also book tasty pizza parties with focaccia cooked in
a 16th century wood-burning oven and a variety of pizzas.
Due to the sterling work of his young wife Stefania, all these
breads are home-made, as are the pasta, hand-rolled according
to the time-honoured tradition, and the delicious desserts and
sorbets. There are two-day and six-day cookery courses, where
you can participate with the chef in choosing the menu, preparing
and, of course, savouring the meal each evening. As the food is
prepared, Enrico Casini will describe the cultural path - be it
classic French cuisine, nouvelle cuisine or regional Italian cuisine
- that led him to his current culinary expressions.

of Italian, and especially Tuscan, cuisine, reworked in the light
of his own experience.
Lunches and dinners for weddings
or banquets for up to a hundred people, personally
tended and indulged by the chef and his staff, with an affection
and attention reminiscent of our grandmothers.
